Operation Birthday Cake 1

It's my daughters sixteenth birthday tomorrow, and Syds first birthday on Monday. That means it is time to get baking the all important birthday cakes. They are also having a joint birthday do on Saturday, but I can't face making three cakes, and as luck would have it my sister-out-of-law runs a fabulous cake business, The Magic Mixing Bowl, so I have burdened her with the task of doing a joint cake for the party.

But I shall tackle their own personal, on their actual birthday, birthday cakes. Betsy has requested Oreo Cake and that is today's task. This is a delicious cake, and a big hit with kids. Only slight problem is it doesn't look particularly glam for an occasion cake, will do my best to make it look nice today tho!

Ingredients.

Cake

225g butter
225g caster sugar
225 self raising flour
3 medium eggs
I packet of Oreos
Vanilla Something- I used essence
1/2 tsp of baking powder

Plus enough vanilla buttercream to fill and cover an 8 inch cake
Mini Oreos to decorate - optional

Instructions

Cream butter and sugar together, then add eggs, flour, baking powder and vanilla essence.

Crush the biscuits. Not too fine- you want small chunks- I like varying size bits!

Add two-thirds of the broken Oreos to the cake batter and stir through.

Divide the mix between two 8 inch cake tins and cook for 25-35 minutes at 180 degrees. (times may vary according to
Oven)

Once cooked remove and allow to cool.

Whip up a buttercream icing. Often I only fill the middle of this cake, but as its for birthday this time I have iced the lot.

I put a third of the icing in a separate bowl along with the leftover Oreos, and once mixed I spread it on the base layer, before popping the top layer on.

I then covered the top with plain vanilla buttercream, and decorated with mini oreos! TA-DA!

Job Done. All that's left to do now is the traditional candle/song ceremony and we can all tuck in tomorrow!
