Wholemeal Apple, Raisin and Cinnamon Muffins

Mmmm more baking. This time because I knew the middler was going to have had a moderately crap day I wanted to welcome him back from school with cake. But because I CANNOT resist eating homemade cake I needed to make something weight watchers friendly- these muffins work out at 4 points each. Which isn't too bad when you consider the blueberry ones from a well known coffee chain are 14 points per cake! The other great thing about these is that because they are are made with wholemeal flour, low fat spread, and lots of fruit, they are good for the kids too. The added fibre from the flour should keep them fuller for longer, and every little bit of fruit counts right!



Makes 12.

125g wholemeal flour
125g self-raising flour
1 1/2 tsp baking powder
50g low fat spread
100g mixed fruit
4 dried apple ring- chopped
75g caster sugar
1 tsp vanilla essence
2 tsp cinnamon
1 tsp ginger
2 eggs
235ml skimmed milk

Rub together the flour, baking powder and fat until the mix resembles breadcrumbs. Then stir through the sugar and fruit. Whisk together the eggs, vanilla, and milk and then stir gently into the mix. Spoon into 12 muffin cases and bake at 180 for 20-25 minutes.

Eat.

But stick at one! Actually they are so filling that I did only have one- my 8 year old managed 2 though!
