We are counting down the days until our trip to Center Parcs, literally in the case of my daughter who has an app on her phone that can tell you the seconds until we leave. We have been perusing the website, even down to studying the restaurant menus, and one my kids, (and me) are looking forward to trying out is the Pancake House. They will no doubt go for sweet and sticky toppings, but I fancy the savoury Forester veggie with sliced potato, spring onion and peas topped with cheese and mayonnaise- Yum!
It’s pancake week this Tuesday and we will be having traditional English pancakes then, with lemon and sugar, but as a Sunday treat we often have American style ones…
135g plain flour
1 tsp baking powder
½ tsp salt
2 tbsp caster sugar
1 large egg
2 tbsp melted butterMix the wet ingredients together, then add to the dry. Stir until smooth, then leave to stand for 10 minutesbefore cooking in a hot pan. For added fun you can use metal cookie cutters to cook the pancakes in funshapes, but it is tricky when flipping, so we did a mixture of shapes, and just dollops!!Then the toppings – fruit, cream, syrups, chocolate spread, and marshmallow fluff! We
even added blueberries into some of the batter- delicious! I am a fan of maple syrup myself, but the
kids tried a variety of sickly looking combinations!!A delicious treat for a Sunday morning!
