Ice Cream Cake

It was Betsy’s 17th birthday yesterday, and I thought seeing as she is an Ice Cream fiend, I would attempt to make a cake with it. And it was really easy, and very delicious indeed.
Basically just pick your favourite ice cream flavours, and squish them into layers in a cake tin, and leave to take shape in the freezer for a few hours. The only thing you need to do is work FAST – ice cream cannot be re-frozen, so I worked quickly, and popped it back in the freezer for half an hour between layers. I also recommend the use of a spring clip cake tin, makes it much easier to get out of the tin at the end!
Making Ice Cream Cake
Layer 1 – Chocolate
I opted for 3 layers – chocolate, butterscotch and oreo. The first two were shop ready, the oreo ice cream was made by quickly stirring smashed up oreos through soft scoop vanilla. In between ice cream layers I put a layer of caramel- again shop bought and from a tin- it is the thought that counts right?!

To finish it off I added a top layer of maltesers, then just before serving dusted with edible gold glitter dust.

To serve, run a knife around the edge of the cake then unclip the spring on the tin, take a deep breath and lift the outer tin away! TA_DA! I didn’t dare add 17 candles in case it melted before we got to the end of the song!

She loved it, her mates loved it, my 9 year old loved it, and the toddler tried to steal all the maltesers- he thinks ice cream is TOO cold. An easy cake to make, the only time really is waiting between layers so you don’t poison anyone with re-frozen ice cream!
Now I have to decide what to make for Syd’s second birthday on Tuesday- am thinking a Monkey made from banana cake currently!

    YUM!!! I’ve made these with layer of ice cream between sponge, but think next time will just opt for just ice cream!

    Out at a very posh restaurant I ordered baked Alaska (any pudding involving ice cream is marvellous as far as I’m concerned!) My husband decided to follow suit. When it arrived my husband tried to send it back thinking he had the wrong dish – he thought he was ordering Arctic roll ( just like school dinners)
