Easy Mario Mushroom Cake

Syd wanted a Mario themed cake this year, and as I am both a bit rubbish at cake decorating, and insist on making their birthday cakes myself, I decided to go for a Mario Mushroom cake rather than tackle one of the more complicated characters.

To start with I baked 2 simple, circular victoria sponges, and layered them with chocolate buttercream.

Then using a sharp knife I cut out the basic mushroom shape.

I utterly cheated and bought ready-to-roll fondant icing, which I stuck to the cake using more chocolate buttercream. I only needed three colours – white, red and black – and it was simply a case of roll out and pop on – if I can manage it, you can!

I added a few sugar paper characters that I had purchased on Amazon for a couple of pounds, and a number three candle. I was pleasantly surprised with how it turned out – and Syd loved it!

    Absolute GENIUS!!
    The only time my mum ever made me a cake was on my 8th birthday as she could put two round sponges together to make a number 8!! You have got to love the versatility of a sponge cake x

    Never mind Mario – you’re my ruddy SUPERHERO! That’s brilliant! I”ve baked a cake from scratch about 3 times in my life – even the kids birthday cakes are from mixes! But baking is high on my list of “could do better” so you’ve inspired me to go for it! I’ll let you know how my endeavours go! x

    It looks great – and good to know it’s so easy. There’s a small part (and by small, I meanTINY) of me that is tempted to tackle a cake for my younger son’s birthday in October. It would have to be Minecraft though!

      I imagine I will be making a Minecraft cake in October too as Max is bound to want one, maybe we can come up with some ideas together!

    That’s fantastic – I”m someone who always insists that the kids’ birthday cakes have to be homemade. Even if I have been known to delegate the making of them to my sister when I was stretched for time.

    I have to admit though that when I read the title of this cake “mushroom cake” I actually thought – ooooh mushrooms in a cake. I wonder how that tastes! Sorry – I’m obviously sleep deprived still.

    That is awesome Sonya!!! I haven’t made a character character cake for years.Because of my eldest has an egg allergy the subject always causes arguments and I end not bothering.Which makes me sad.

      There are some great egg free recipes out there, I have some vegan friends and have made egg free chocolate cake before, I bet there are some that would work well for decorating. Let me know if you would like the recipe x
