Some days I make slow cooked casseroles from scratch, featuring the requisite 5-a-day and carefully nurtured, taste tested and adjusted throughout the afternoon. Some days I have very little time or inspiration and have to cobble together something quick and easy for my boys. These simple savoury turnovers are for the latter days, and sadly they are usually far more appreciated than the lovingly prepared healthy stuff!
I use a pre-bought roll of puff pastry. I don’t have the inclination to make it from scratch – I have seen them do it on bake-off and it looks time-consuming and complicated – when the ready-made one is good and cheap why bother! Take it from the fridge and give it ten minutes to get up to room temperature, then unroll and divide into 8 rectangles.
The cheese and veggie bacon filling came about because occasionally I would see the real meat version in bakers windows and think they looked tasty, so I made some with veggie bacon and they were delicious! Simply lay the veggie bacon strip diagonally across the rectangle of pastry, and top with a little grated cheese. Then it is as easy as folding the empty corners to meet each other and pinching the pastry together.
For a slightly posher version I fill with mozzarella, tomato and basil. Again lie the filling along the diagonal then pinch together the edges. Top tip: Use a square of kitchen roll to dab dry the mozzarella and tomatoes a little to avoid a soggy result.
Both flavours need brushing with a little milk or egg before popping into an oven at 220 degrees for approx 15 minutes. Top tip; put them on a pre-heated baking tray so the bottom of the pastry cooks better.
If you need a little something on the side, we like the bacon and cheese ones with hash browns and beans (and of course red or brown sauce!), the mozzarella ones work well with a nice peppery salad in summer. Other tasty fillings I use are spinach and ricotta or pesto and roasted veg – yum. Simple, tasty, and always very quickly gone.
