Chocolate and Almond Brownies

I was going to write an opening paragraph about how the shorter, rain filled days make me crave cake, but that wouldn’t be strictly true, I always crave cake, whatever the weather.  I guess the difference at this time of year is that where as a Summer’s day might make me dream of light lemon sponges, Autumn days make me crave something richer and darker, like these chocolate and almond brownies.

Very rich, not toooo sweet and perfect with a cup of coffee in front of the fire – in fact speaking of coffee, sometimes I also add a spoon or two of instant espresso when making these, but not if I am going to share with the kids – one thing my four-year definitely doesn’t need is espresso, he spends half his time quite literally bouncing off the walls as it is!

Delicious and rich chocolate and almond brownies.

Ingredients
  • 175g butter
  • 220g soft brown sugar
  • 3 medium eggs
  • 200g plain chocolate, preferably 70%
  • 50g self raising flour
  • 50g ground almonds
  • 60g cocoa powder
  • Flaked almonds for the top
Instructions
  1. Cream the butter and sugar
  2. Add the eggs one at a time and mix - don't panic if it looks split, it will all come together in the end!
  3. Melt the chocolate, allow to cool for a minute or two then add to the mix and stir in.
  4. Fold in the dry ingredients.
  5. Pop into a baking tray.
  6. Scatter the top with flaked almonds.
  7. Cook at 180 degrees for 20-25 minutes until the top is crisp, but the inside still a little soft.
  8. Allow to cool before cutting into squares or triangles.

I have been enjoying a piece this morning with a coffee and a Christmas magazine. Which made me feel just slightly hypocritical as have been ranting about seeing Christmas Trees in shop windows!! Mind you, much as I am enjoying browsing festive things, and planning presents and food – you won’t catch me with as much as a dangling bauble in the house until December – I love Christmas, but don’t want to dilute the joy by spreading it out over more of the year – what about you? Are you a tinsel in November kind of person, or will you wait until nearer the time before getting out the sparkles in your house?

    I love cake all the time so this I would polish off no trouble! I like to get the Christmas decorations out on 1st December but I do enjoy hearing Christmas songs out shopping from November onwards. From January to October I never want to hear Christmas songs!!

    Oh wow Sonua these sound delicious and look very tasty indeed too. Gorgeous! Must start to pull together some recipes for when I’m cooking more. These will definitely be near the top!
