Christmas Nut Roast

With Christmas creeping up fast I have started thinking about what to have with our roast this year. While the daughter will have a slice or two of turkey, the rest of us are vegetarian, so require something different. Some years I buy a ready made option, some years I make something myself, and I decided last week to have a trial run of Nut Roast – it was delicious and not very time consuming to make, which is important as on the day I would rather be by the tree with a Baileys than slaving in the kitchen over something complex!

I have made nut roasts before, but not for years, and I had forgotten how much nicer a homemade one is. For extra Christmas flavour I added a layer of Wensleydale with Cranberries through the middle. It was tasty, easy to slice, and I served it to meat eaters for dinner that night, and they really liked it too (not that I imagine they will be choosing it over turkey on the day itself!).

A delicious Nut Roast with a layer of Wensleydale and cranberries.
Recipe type: vegetarian

Serves: serves 6
  • 200g mixed chopped nuts
  • 50g roasted chopped hazelnuts
  • 75g breadcrumbs
  • 2 medium eggs, beaten.
  • 200g Wensleydale with cranberries - sliced.
  • 1 small onion
  • 1 small carrot
  • 1 clove garlic - crushed
  • 2 to 3 tablespoon olive oil
  • 1 teaspoon yeast extract dissolved in 1 tablespoon of hot water
  • Salt and pepper.
  1. Chop the carrots and onion to a fine dice, and fry gently until soft in 1 tablespoon of olive oil, along with the garlic.
  2. In a bowl mix the nuts and breadcrumbs together, then add in the softened veg, the yeast extract mix, a tablespoon of olive oil and the eggs and combine the mixture well. Leave for 5 minutes and if the mix seems too dry add another slurp of olive oil.
  3. Transfer half the mix into a lined loaf tin, and push down well. Cover with the sliced Wensleydale, then add the rest of the nut roast mixture on top, again pushing down well.
  4. Pop into a 200 degree oven for 35-45 minutes until golden brown and firm. Leave to cool for a few minutes before removing from tin and slicing.

We will be having ours with roast potatoes, leeks in cheese sauce, and of course a sprout or two. Do you go for traditional turkey or something different in your house?

    You might be surprised what we would choose. We are out for our “pensioners” Christmas lunch in a couple of weeks and I have chosen the nutroast. I’d done this even before we tried this lovely one at your place last week. xx

    Oh this looks and sounds delicious. I was veggie for 14 years and the husbeast although a meat eater didn’t get the choice! I went back to eating meat when pregnant, although we don;t eat all that much

    As the only vegetarian in the house, this is usually what I have for Christmas dinner. There will not be any sprouts though – I can’t stand the things!

    Ooh I’ve never tried nut roast but it does look very tasty indeed! We’ll have to give that one a try albeit not for Christmas – my mother in law does a huge spread with lots of meat! And veg too obviously! Can’t believe it’s nearly Christmas 🙂

    ooh I love a good nut roast, although I don’t eat eggs so would have to sub them. leeks and cheeses sauce sounds like a splendid idea too
