Chocolate and Almond Brownies

Delicious and rich chocolate and almond brownies.
  • 175g butter
  • 220g soft brown sugar
  • 3 medium eggs
  • 200g plain chocolate, preferably 70%
  • 50g self raising flour
  • 50g ground almonds
  • 60g cocoa powder
  • Flaked almonds for the top
  1. Cream the butter and sugar
  2. Add the eggs one at a time and mix - don't panic if it looks split, it will all come together in the end!
  3. Melt the chocolate, allow to cool for a minute or two then add to the mix and stir in.
  4. Fold in the dry ingredients.
  5. Pop into a baking tray.
  6. Scatter the top with flaked almonds.
  7. Cook at 180 degrees for 20-25 minutes until the top is crisp, but the inside still a little soft.
  8. Allow to cool before cutting into squares or triangles.
