Ceylon and Vanilla Cupcakes

Cupcakes flavoured with black tea and vanilla
  • 110g butter
  • 110g caster sugar
  • 110g self-raising flour
  • ½ tsp baking powder
  • 2 medium eggs
  • 60ml tea infused milk
  • 140g softened butter for the icing
  • 280g icing sugar
  1. Cream together butter and sugar
  2. Beat in the eggs
  3. Stir through the flour and baking powder, and 2 tbsp of the infused milk.
  4. Pop into 12 cupcake cases and bake at 180 degrees for 10-15 minutes.
  5. Allow to cool completely before icing with buttercream made by:
  6. Beat together the icing sugar, softened butter and 2 tbsp of the infused milk until smooth.
  7. Ice the cakes and enjoy!
