Oven Baked Falafel

  • 1 small onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 x 400g tin of chickpeas
  • 2 tsp cumin
  • 1 tsp mixed herbs
  • 1 medium egg - beaten
  • Olive oil for frying and brushing
  • Salt and Pepper
  1. Fry the onions and garlic in a little olive oil until soft.
  2. Drain the chickpeas and add into a bowl with the cooked onions. Mash the chickpeas and onions together, don't worry if there are a few bigger bits. (A potato masher or fork will both work)
  3. Add salt and pepper to taste, then mix through the beaten egg.
  4. Divide the mix into 12 and pop each portion into a greased jam tart tin.
  5. Leave to chill for half an hour.
  6. Brush the top with oil, then pop into an oven pre-heated to 200 degrees for approx 25 mins until golden and crispy on top.
